Color Profile: Fresh beef should display a bright cherry-red color (vacuum-sealed cuts may look slightly purplish until exposed to air). Pork should be pale pink with white fat, while lamb should be a soft brownish-pink. Avoid any meat showing gray, green, or dark brown patches.
The Touch Test: Gently press through the packaging. Fresh meat bounces back immediately. If your finger leaves an indentation, muscle fibers are breaking down.
